I'm guessing a large number of you have already heard of The Pioneer Woman. I for one love her, but her bacon adding, butter toting, cheese covered ways, while amazingly delicious, don't make for necessarily the healthiest dinner options. That said, I have been able to successfully lighten a few of her recipes, while still keeping them delicious. Both my husband and I agree this is our all time favorite meal:

Pioneer Woman's Meatloaf - PointsPlus style - and yes there is BACON!
Makes 6 servings - 8 PointsPlus Values each
Meatloaf:
3 slices any sort of bread
1/2 cup skim milk
1 pound extra lean ground beef
2 eggs
1/2 cup Parmesan cheese (the kind that comes in a can)
3/4 tsp 4S (from Penzey's) OR any sort of seasoned salt, but seriously 4S is the bomb for that matter Penzey's in the bomb, and they didn't give me anything to say that, but maybe they should.
1/4 tsp pepper
2 Tbsp dried parsley
5-6 slices of bacon
Tomato Gravy:
Mix together in a separate bowl:
3/4 cup ketchup
3 Tbsp Brown Sugar
1/2 tsp or so of any sort of mustard
Mix bread and 1/2 cup of milk... let sit for about 5 minutes to mush up, add in the ground beef, eggs, cheese, and seasonings, mix into a loaf and place on a cookie sheet - this will make a pretty big loaf. Lay slices of bacon long ways over the top, slightly overlapping. Cover with 1/3 of the tomato gravy.
Bake at 350 degrees for around 35-40 minutes, add another 1/3 of the tomato gravy to the top, and bake about 15 minutes longer. Serve with remaining tomato gravy on the side.
Makes 6 huge and freakishly delicious servings
Roasted Fingerling's... take fingerling potatoes - I've personally confirmed that you can get these at both Trader Joes and SuperTarget. I pour on about 1 Tbsp or so of olive oil per about 1 pound of potatoes, season generously with salt and pepper, mix together and roast in a square baking dish for around 35-40 minutes on 400 degrees. It is 2 PointsPlus for 3 ounces of potatoes and I sometimes count 1 extra point for the olive oil, but it honestly it probably isn't a full points worth in a serving. You do what works for you.
Roasted Carrots... peel and slice carrots diagonally in about 1-1/2 inch pieces, do the same sort of salt, pepper, olive oil as above for the potatoes. Roast at 400 for 40-45 minutes until just tender. I actually make these in my toaster oven while the other things are cooking in the big oven.
