Honey Curry Chicken

It seems like the whole country is cold and snowy these days.  Here in Minnesota, of course, we are used to it but it doesn't mean that we don't crave spring this time of year.  I have been craving comfort food lately, and this is what was on the menu recently, that helped that craving.



Honey Curry Chicken
3 points plus for 1-1/2 Tbsp of the sauce
I count the chicken 1 point per ounce for however much I want!

4-6 large bone-in skinless chicken breasts
1/4 cup butter/margarine melted
1/4 cup of honey
2 Tbsp Dijon mustard
1 tsp salt
1 tsp curry powder

Mix the ingredients together except for the chicken and pour over chicken breasts that have been skinned and rinsed and placed in a 9 x 13 baking dish ... this is enough sauce to easily cover 6 really big pieces.  I like to use the bone in breasts - as they stay moist while baking.

Bake at 375 degrees for 1 hour basting with the sauce every 15 minutes.

Serve over basmati rice and with roasted carrots
