Menu Monday 5/14

This past week was not necessarily a fun one.  Lily was sick... again!  Thankfully there was no ear infection this time so the tubes are apparently working.  Today she is having her hearing rechecked, as she failed the last 2 hearing tests before she got her tubes.  I am hopeful for a positive outcome.

Despite all of that, she is finally feeling better and eating better, so we enjoyed a nice Mother's day yesterday, spending a lot of time outside - finally - after the last 3 weekends of rain! 

I'm still struggling with insomnia.  It has gotten even worse, but I am trying to be hopeful that the cycle will break soon.

Now on to this week's menu.

Chicken Enchilada Pasta
Tomato Cheese Quiche, Salad
Naan Bread Pizzas
Curry Chicken Casserole - recipe below
Club Sandwiches and Sweet Potato Fries
Roasted Asparagus and Fingerling Potatoes, Burgers


Curry Chicken Casserole
Serves 6 @ 8 Points+ each

1 - 10 package of frozen broccoli
2 cups cooked shredded chicken
2/3 cup of light mayo (we like Hellman's)
1 can of healthy request cream of chicken soup
1 Tbsp lemon juice
1/2 cup of skim milk
1 Tbsp Curry powder - or less to taste
salt and pepper to taste
 1 cup of reduced fat shredded cheddar cheese
1 cup of Stove Top stuffing - do not prepare, just dry


In 9 x 13 greased casserole dish, distribute broccoli evenly.  Top with shredded chicken

In separate bowl combine the mayo, soup, lemon juice, milk, curry and salt and pepper.  Mix well.  Pour over chicken and broccoli.  Top with the shredded cheese.  Top with the Stove Top stuffing.

Bake at 350 for 35-45 minutes until bubbly and broccoli is done.

  1. wow, that's a lot of processed food/ingredients that surely can't aid in obtaining weight loss and a healthier life.

    I make food that my family will eat. This gets my son to eat broccoli and chicken breast, so I do what works! If you've read my blog for any amount of time you would know that I certainly know how to lose weight in a long term and healthy way as I've lost 115 pounds and it took me 2 years to do it. I am not paleo, I do not just eat a clean diet. That does work for some people, for me I try to get a good balance of foods and eat in a way that works for my family and sometimes that includes cream of chicken soup in a sauce. If you saw my cart at the grocery store you'd notice that the majority of it is fresh stuff.. produce, meat, and dairy.
