  2. My fav Holiday Recipe is a green bean cassarole, to lighten it up I use low fat cream of mushroom soup, Fat Free Cream Cheese and reduced fat Cheddar Cheese. I also leave off the cracker crumbs on top. It really doesn't need them.

  3. Here is the original recipe:

3 (9oz) frozen French Style Green Beans
3 TBSP Margarine (I use Promise)
1 can cream of mushroom soup, undiluted
1 (3oz) pkg cream cheese, softened
    1 tsp dried onion flakes
1 (8oz) can water chestnuts, drained and sliced
    1/4 tsp garlic salt
    1/4 tsp black pepper
1 1/2 cup cheddar cheese, shredded
    Buttered cracker crumbs
    Paprika
Cook green beans according to package directions, drain. Melt margarine in Dutch Oven; add soup and cream cheese. Cook over low heat, stirring constantly until cream cheese is melted and mixture is smooth. Remove from heat and stir in green beans, onion flakes, water chestnuts, garlic salt, pepper and shredded cheddar cheese. Spoon mixture into 1 3/4 quart cassarole. Top with buttered cracker crumbs and sprinkle with paprika. Bake uncovered at 375 for 45 minutes. Serves 8.

  5. Sarah, I love your blog and you know that I have been following you for years before this blog. You are so special to me and I am so PROUD of you!

I make a veggie casserole every Thanksgiving and have learned to lighten it without anyone in my family telling a difference. Here is the lightened version.

2 cans french style green beans (I get low sodium) - drained
2 cans whole kernel corn (I get no salt) - drained
2 cans Fat free cream of chicken or one of each chicken and mushroom soup
8 ounces fat free sour cream
8 ounces 2% sharp cheddar cheese - shredded
1/2 stick I cant believe it's not butter
1 sleeve of reduced fat and/or wheat ritz crackers

Mix all ingredients but last 2 and pour into 9 x 13 pyrex dish. Crumble crackers and place on top of mixture, poor melted butter on top. Bake 425 for 30 minutes or until brown and bubbly. ENJOY!

    Happy Thanksgiving!

  7. I just came across your blog today, thanks to shrinking mommy of two, and i am so glad i did!! sarah, i can't tell you what a tremendous blessing your blog has been to me today. i have been on a weight loss journey for just over a year now. the first 20 pounds came off pretty easy, then another 7 pounds followed over the course of a few months. it has been a struggle trying to lose that last 5 pounds, plus keeping off the other weight i lost. just this week, i have been dealing with a family issue which has me under a load of stress, and i have found myself not counting WW POINTs and not paying much attention to what i'm eating. uugghh!!! i'm also being lazy and not exercising. always have an excuse, you know? anyway, after reading your blog today (you look GREAT by the way!!) i am now so inspired to get back on track and take care of myself. it's so easy to think i need to take care of everybody else first, but i know i need to make time to care for me. thank you again for sharing your life through your blog...i look forward to following you now! oh, and i'm signing up for the cookbook give-away! :)
